Recipes from NOVA Magazine

We believe the truth of the saying, "You are what you eat" and that the best way of gaining all the nutrients we need from food is through eating whole foods. Whole foods are those as close as possible to their natural state and include whole grains, vegetables, fruit, nuts, seeds, eggs, sustainable fish and ethically raised meat.

It encompasses the organic, biodynamic, seasonal, local, free range and sustainably farmed approaches and many of our recipes are vegetarian, gluten-free or suitable for vegans.

We believe there is no place in a healthy diet for processed foods, just foods you cook with heart and soul and we're delighted to share Jude Blereau's deliciously nourishing recipes with you.

Chocolate, Cocoa Nib and Cherry Biscotti This is my personal prescription for those of you who just want a little something delicious when you sit down after dinner with a cup of tea. They do have some expensive ingredients, but in small amounts, and the recipe makes 32 odd - oh, and they last for ages, and did I say they are really good?

Fruit Mince This is the loveliest fruit mince I know. It's light and moist, and has none of the horrible peel found in so many versions. It's the perfect place to use seconds or windfalls. You can easily keep this in a clean, sealed jar in the fridge forever, but if you want to keep it in the pantry, you'll need to give it a boiling water bath. The jars will need to be proper jam jars, so they withstand the heat of the water bath.

Traditional Butter Cupcakes & Raspberry Butter Cream Frosting I prefer to use a white spelt flour here, but a white wheat flour is fine. The classic butter, sugar, egg, flour cupcakes - these are delicious and keep exceptionally well. Orange or lemon zest would be delicious additions to the batter.

Coconut Cream Ramikens An amazingly quick and delicious dessert to put together. Simply pour the Coconut Cream into little ramekins or small glass containers, and top with fruit of choice.

Bengal Chutney As this chutney is sweetened with sugar, it's not necessary to process it in a boiling water bath. However, the jars, lids, ladle and funnel will need to be sterile.
