date RECIPE DESCRIPTION
main dishes
Aug 08 Bubble and Squeak One of the best ways to disguise cabbage, and a brilliant base upon which to build a cheap and nourishing meal.
June 08 Quinoa and Vegetable Pilaf with Indian Flavours If you have a teenage vegetarian, this is the recipe you should give them to master.
May 08 Lemon & Polenta Crumbed Fish with Chips The recipe for this month - It's to show you it doesn't take long to cook a good dinner proper fast food
Nov 07 Brown Rice Long or short grain brown rice is fine. For more flavour, try parching the rice first. Add it to a frypan and roast over a gentle heat for about 5 mins before soaking.
Nov 07 Black Beans Black turtle beans, pinto or borlotti are all freely interchangeable, and are a great option for many dishes.
Nov 07 Dragon Bown Sauce Currently my favourite sauce – great also for stir frys.
Sept 07 Pirate's Pie This is the kind of pie I would make for my pirate husband, when he returned from the seas, with a handful of freshly caught fish.
July 07 Red Wine Braised Lentils with Beetroot and Root Vegetables Brown and green lentils are not as easy to work with as you think - their extreme astringency needs tempering to provide a full flavoured and satisfying end result.
powerful Soups
May 07 Healing Chicken Soup Dairy/Gluten Free: Really, this is more of a soup than a stock, but if you have a family, you can supply a meal, as well as nourish yourself as well, by just eating the broth.
May 07 Shitake Mushroom, Vegetable & Barley Soup Shitake mushrooms strengthen, detoxify and restore. Renowned as immune boosters with antiviral and antitumour properties, they are rich in vitamin D, B12 and protein. Barley has a wonderfully soluble fibre and is rich in minerals such as magnesium.
snacks
June 07 Anatomy of a Snack - Muesli Bars - Wheat and Dairy Free Even when made entirely with organic ingredients, these are still far, far cheaper to make than buy. They're quick too - so it's a win, win all around.
breakfast
April 08 Breakfast Muffins Wheat free. Makes 10 - 12 muffins.
Feb 08 Berry Nice Pancakes Really, a bit of a cross between a pancake and pikelet. Serve with yoghurt if desired, and your sweetener of choice (honey, maple syrup, brown rice syrup).
July 07 Vegetarian Flapjacks FLAPJACKS vegetarian, gluten free: Great for breakfast, lunch or dinner, quick to put together and yummy. Makes approx 6 large patties that are always well received by children and adults alike - I think it's the crispy, golden taste of the potatoes, and no one knows you've managed to sneak in some other vegies!!!
cooked savoury snacks
July 07 Sausage Rolls If you're interested in notching up brownie points with your family, hot sausage rolls on a cold day will do it. Uncooked, these freeze fabulously.
Vegetarian or Meat Recipes
Sweets
July 08 Pumpkin Pie I grew up on Pumpkin Pie and love it hot or cold. It’s wonderful and brimming with soul.
March 08 Apple Brown Betty This is a very, very old fashioned pudding made from really very little at all, but it rates as one of my very favourite puddings.
Dec 07 Chocolate, Cocoa Nib and Cherry Biscotti This is my personal prescription for those of you who just want a little something delicious when you sit down after dinner with a cup of tea. They do have some expensive ingredients, but in small amounts, and the recipe makes 32 odd - oh, and they last for ages, and did I say they are really good?
Aug 07 Fruit Mince This is the loveliest fruit mince I know. It's light and moist, and has none of the horrible peel found in so many versions. It's the perfect place to use seconds or windfalls. You can easily keep this in a clean, sealed jar in the fridge forever, but if you want to keep it in the pantry, you'll need to give it a boiling water bath. The jars will need to be proper jam jars, so they withstand the heat of the water bath.
Oct 07 Traditional Butter Cupcakes & Raspberry Butter Cream Frosting I prefer to use a white spelt flour here, but a white wheat flour is fine. The classic butter, sugar, egg, flour cupcakes - these are delicious and keep exceptionally well. Orange or lemon zest would be delicious additions to the batter.
Makes 9 - 12 cupcakes
Jan 08 Coconut Cream Ramikens An amazingly quick and delicious dessert to put together. Simply pour the Coconut Cream into little ramekins or small glass containers, and top with fruit of choice.
CONDIMENTS
Aug 07 Bengal Chutney As this chutney is sweetened with sugar, it's not necessary to process it in a boiling water bath. However, the jars, lids, ladle and funnel will need to be sterile.
